What is for Dinner?

Are you forever asking yourself What is for Dinner? People often ask me how I can be bothered cooking everyday and to be honest, it is not easy however; I have a few go to recipes that take no time at all and I thought I would share with you all one of my go to meals (especially in the warmer months when you don’t want to be standing over a hot stove for too long.)

I based this 15 minute recipe on a wrap from an Indian Restaurant I used to get lunch from.

TANDOORI CHICKEN WRAPS

What you will need:

Fry Pan
Cutting Board
Sharp Knife
Cooking oil (optional)

What you wont need:
3 bottles of tequila in the picture below

Ingredients:

Wraps – 1 or 2 per person
Breast Chicken – 150-200grams per person
1/2 jar or 1/3 cup of Tandoori paste – Jar from supermarket or see below for recipe
Roma Tomatoes – 2
Cos Lettuce – 1
Cucumber – 1
Red Onion (Optional)
Greek Yogurt (Optional)

Directions:

Pre-heat the stove add 1 tsp of cooking oil (optional)
Cut up the breast chicken into strips and place in a bowl with the Tandoori Paste and mix well.
Cut up the tomato, cucumber, cos lettuce and onion if using (place to the side until the chicken is done)
Cook the chicken in the fry pan for approx 15 minutes or until it is done (cooking times will vary depending if you use a gas or electric stove)

Once the chicken is cooked thoroughly you are ready to make your wraps.

Place a handful of the salad on a wrap and then add some chicken.

This particular brand of Tandoori paste I used was extra spicy so you can also add some Greek yogurt, this will make it more mild without ruining the taste.

And now you can enjoy your Tandoori Chicken Wrap!!!

If you want to be semi authentic you could also make a cucumber and yogurt dip to go on top instead of just using plain yogurt.

To make my quick version of the Raita dip all you need to do is add the following to the Greek Yogurt:

1 cucumber (finely chopped)
1/4 cup of chopped coriander (Cilantro)
2 tablespoons of lemon juice

For an Authentic Raita Dip you would need to check out google.
